Syrah

Syrah is Will's passion project – and perhaps Novum's most personal wine.
The idea that the world's greatest wines are often grown on the edge of climatic suitability – think Champagne – is exactly how we see Marlborough Syrah. On the edge, and all the better for it.

 Style: Cool climate Syrah of real elegance – perfumed and peppery when young, developing a compelling savoury earthiness with age.

 Close planted, low to the ground, the vines soak up the summer heat radiating off the earth and ripen slowly and perfectly. We have also quietly interspersed a tiny amount of Viognier – the white grape of the northern Rhône, the traditional home of Syrah – throughout the block. It fills the mid palate, adds silky texture and lifts the dark fruit into something more complex. Violet, blackberry and white pepper give way, with time, to an earthy savouriness that is deeply appealing.
This is a wine that surprises people – and then wins them over completely.
